If you’re on the hunt for a delightful snack that combines the irresistible flavors of chocolate and peanut butter, look no further! Ingredients
- 3 cups organic puffed quinoa (I use Cereausly Puffed Quinoa)
- 1 cup dark chocolate chips of choice (preferably made without refined sugar, I use Dark Chocolate Chips by Bake Believe)
- 1 Tbsp organic coconut oil
- Peanut Butter (Optional – to drizzle on top of crisps)
- Sea Salt (Optional – to sprinkle on top of crisps)
Directions
- Measure puffed quinoa into large mixing bowl and set to side. Measure dark chocolate chips and coconut oil into microwave-safe dish. Heat chocolate and oil in 30-second intervals until melted and smooth. Pour chocolate mixture over quinoa and mix well.
- Place parchment paper on a cookie sheet or other dish safe for freezer.
- Scoop quinoa chocolate mixture onto cookie sheet by heaping tablespoon (or desired size). I make my crisps roughly 2 inches in diameter. They do not come out as perfect circles, and that’s okay!
- Drizzle peanut butter over crisps, if using. Sprinkle sea salt over crisps, if using.
- Place in freezer for a half an hour. Remove from freezer and enjoy, or place in an airtight, freezer-safe dish and store for up to three weeks.
