Ingredients
- 1/2 cup organic coconut flour
- 1/4 tsp baking soda
- 1/2 tsp sea salt
- 1/2 cup chocolate chips (I use Dark Chocolate Chips by Bake Believe)
- 1/4 cup coconut oil (melted)
- 1/4 cup maple syrup (or honey)
- 1/2 tsp vanilla extract
- 2 large eggs
Directions
- Preheat oven to 350 degrees. Combine coconut flour, baking soda, and sea salt in medium mixing bowl.
- In separate, microwavable-safe dish, melt coconut oil. Then add maple syrup, vanilla extract, and eggs. Combine well.
- Add wet ingredients to dry ingredients and stire until combined. Mixture may be slightly crumbly, but that’s okay!
- Add chocolate chips and combine.
- Scoop dough with medium cookie scoop, or heaping tablespoon, and place on parchment lined cookie sheet. Gently press down cookies to shape as they will not expand while baking. You should be able to make about 12 cookies.
- Place in preheated oven and bake for 10 to 15 minutes, or until edges are slightly golden brown.
- Remove once done, let cool, and enjoy! Store in airtight container on the counter for up to a week.
