Easy Double Chocolate Sourdough Bread Recipe

Ingredients

  • 300 grams bread or all purpose flour
  • 70 grams brown coconut sugar (or brown sugar)
  • 60 grams cacao powder
  • 1 tsp sea salt
  • 75 grams fed sourdough starter
  • 260 grams water (may need more!)
  • Chocolate chips (if desired)

Directions

  1. Combine flour, coconut sugar, cacao powder, and salt in a large mixing bowl.
  2. Add sourdough starter and water to mixture and combine with Danish dough hook, fork, hands, or other preferred tool.
  3. Add extra water if needed. I usually wet my hand and continue combining manually.
  4. Cover bowl and wait 30 minutes before doing first set of stretch and folds. You will want to do four sets of these over the next two hours.
  5. After 4 stretch and folds are completed, cover dough and set in a relatively warm place for another two hours.
  6. Remove dough from bowl and place on a floured surface. Form dough into a round loaf. Add chocolate chips to dough here if using.
  7. Place loaf in banneton and let proof for 1-2 hours (depending on room temperature). Preheat oven to 450 degrees the last 15-20 minutes of proofing with Dutch oven also preheating in oven. *Check for bread proofing doneness by gently pressing a wet finger into the dough. If it is slow to return, it is done proofing. If not, check back in 30 minutes!
  8. Flip loaf onto parchment paper or silicone mat, score as desired, and place into preheated Dutch oven.
  9. Place lid on Dutch oven and bake for 30 minutes. Remove lid and bake for another 20-25 minutes.
  10. Once done, remove bread from oven and let cool. Wait at least an hour before cutting. Enjoy!
